The Short Answer

No. The Bureau of Labor Statistics (BLS) projects chefs and head cooks to grow about 7% through 2034, faster than the average occupation, and nothing on the market can taste a sauce, run a pass at 8:40pm, or carry the food safety responsibility your name is on. What is changing sits either side of you. The robotics being sold to restaurants is priced against entry-level line labor, which thins the pipeline you promote from, while AI is quietly taking over the costing, ordering, and paperwork half of your week.

Eleven forty, section broken down, everyone gone, and you are sitting on an upturned crate in the dry store with the order sheet on your knee, trying to work out how much fish to bring in for a Saturday you cannot quite predict.

At the family meal earlier somebody was laughing about a clip of a robot arm building salad bowls.

You laughed too. Then you came back to this.

That is roughly where the question sits for most chefs. The worry arrives dressed as a robot and lands as a spreadsheet, and almost nobody talks about the second one.

The machines that arrived went to the line, not the pass

Sweetgreen’s automated makeline is the clearest example anyone has. Restaurant Dive reported the system can produce 500 bowls an hour, average tickets in those stores ran over 10% higher than surrounding markets, and the machine costs somewhere around the yearly starting wages of fourteen full-time kitchen workers.

Read that last part again, because it is the whole argument. The thing being replaced was priced in units of entry-level kitchen labor.

What that machine does is assemble a fixed, portioned product at volume. It does not develop anything, taste anything, or change its mind about a dish in October. And the Bureau of Labor Statistics (BLS) projects chefs and head cooks to grow about 7% from 2024 to 2034, faster than the average across all occupations, with roughly 24,400 openings every year over the decade.

So the trade is not going anywhere. Something else is moving.

What AI cannot do in a kitchen

Start with taste, because everything else follows from it. A model can tell you that brown butter and hazelnut sit well with squash, and it might be right, but it has never eaten either, so what you have is a hypothesis that still needs cooking three times before it is a dish. The decision about whether food is good is made by a person with a spoon, and nobody has found a way around that.

Then there is the pass at twenty to nine on a Saturday. Which ticket fires now, which cook has quietly stopped coping, which plate goes back rather than out. That judgment is built from years of standing in the same spot watching things go wrong, and it is not written down anywhere for a model to have read.

And there is the responsibility. Your name sits on the food safety plan and on the answer you give about table nine’s allergy. Software cannot hold that, which is why the last decision in any kitchen still ends with a human being who can be asked why.

Talk to enough chefs and the pattern is consistent. The ones who worry loudest about being replaced are usually the ones whose week is being eaten by work that is not cooking at all.

The automation is aimed at the people you promote from

The bit that gets missed is this. If a makeline is priced against fourteen entry-level wages, then the jobs it takes are commis jobs, prep jobs, and line jobs. Those are not your job. They are the jobs where cooks used to learn the trade on somebody else’s payroll before anyone let them near a section.

Thin that layer out and the effect on you is not redundancy. It is that the person who turns up wanting to be a chef has fewer places to learn, arrives less finished, and has to be taught things a previous generation absorbed by standing next to someone for two years.

Which quietly changes what a head chef is for. More of the job becomes training, systems, and writing things down so they can be repeated by somebody who joined in March. Less of it is the assumption that a good cook will be delivered to you already made.

Dish costings that are still done at invoice prices rather than at what the trimmed product actually cost. Prep lists written from memory instead of from tomorrow’s covers. The allergen sheet the floor team needs by Friday. The supplier email about the short delivery you have not sent because writing it while annoyed felt like a bad idea. Every one of those is words and arithmetic, and every one of those can be drafted before your coffee goes cold.

A short example of the kind of thing that takes two minutes instead of forty.

I am the head chef at a [SIZE]-seat restaurant. My [INGREDIENT] delivery did not arrive and three dishes tonight depend on it. The dishes are [LIST THEM WITH THEIR COMPONENTS]. I have in stock [LIST WHAT YOU ACTUALLY HAVE]. For each dish, give me the best substitution using what I have, what it does to the dish, whether the menu wording has to change tonight, and whether the swap adds or removes any of the 14 major allergen categories. Be honest if a dish is better pulled than substituted.

Write the kitchen down before the next commis starts

If there is one move worth making this year, it is this one, and it has three parts.

Cost your three highest-volume dishes properly, which means weighing the trim once and using the yield rather than the invoice price. Most chefs find a gap on their best seller, and finding it there is worth more than finding it anywhere else.

Get one week of prep and ordering out of your head and onto paper, built from a covers forecast and your own dish mix rather than from what you did last Tuesday.

Then write the guide for the section that eats new starters. Setup, the dishes, the portion sizes, the checks before service, and a short list of the five things where they should stop and ask rather than guess. That document is what makes a thinner hiring pool survivable.

None of that is glamorous, and all of it is the difference between a kitchen that depends on you being there and one that does not.

So will AI replace chefs?

No, and the numbers are not close. The occupation is growing, the core of the work is physical, sensory, and legally yours, and the machines being built are aimed at assembling portioned products at volume rather than at deciding what should be on a plate in the first place.

What is worth taking seriously is the quieter version. The rung below you is being automated and priced accordingly, which makes teaching and systems a bigger share of your job than they were five years ago, and the paperwork that funds all of it is still being done at midnight on a crate.
